You may have noticed that the same subjects keep coming up all of the time. We all glean a certain amount of information about important issues, but for some reason it never makes as big of impression as it should. Why is it that most of us don’t eat enough vegetables? Seniors know better, but they are the biggest offenders. If you routinely shun salads (rabbit food, I believe is the term), pass up the peas and hate broccoli, you are denying your body of the fiber, folic acid, and antioxidants that help you ward off a host of evils (such as heart disease, diabetes, memory loss or strokes).
If you were reared in a meat and potato family it may be difficult for you to change your ways. Mothers have always put vegetables on the table and kids and dad alike routinely turn up their noses. You have been robbing yourself for years.
It isn’t too late to undo the damage though. Experiment and find a few that you can live with. Studies show that you can feel the benefits in as little as 4 weeks. Let’s look at some of the benefits: Better digestion, stronger bones, lower risk of heart disease and fewer wrinkles. If that doesn’t sound like a magic potion, what does?
But vegetables are so blah! Find new ways to fix vegetables. Fix two vegetables and a salad and serve them every night for dinner. Try a tasty bean salad or start with a plate of raw veggies and dip, or add all sorts of veggies to your salad. Add more veggies to stews, soups and casseroles. Oh, if you add a little fat they will taste better (olive oil, margarine or cheese). Fat not only makes them taste better but will increase the absorption. Yes, tomato or vegetables juices count.
Make it easy. Pick up pre-sliced veggies from a salad bar or buy pre-prepared veggies from the produce section. You can even buy veggies in a bag that are ready to steam. Of course they cost more but it will be the best money that you ever spent.
